Vegan Crème Brulée tartlet

Valentine’s day is here once again! I am sure each and every one of us has a different Valentine tradition, and a different Valentine story to share… For me, I spent many Valentines with my hubbie,  even if with years, and experiences, we realised good company is what one really need during Valentine’s Day… and a nice homemade dinner!

One of my best Valentines? Our first one, when we went to this amazing location on Garda Lake and where something like 8 years later he proposed…

Our worse was probably the only time we decided to go out for dinner in a nice restaurant, which was overcrowded, overpriced and the food was overcooked… bit toooo much overall!

Now, I really hope your plans include something better than that, and if you have a special someone you want to impress, or simply you are home alone and you feel like something sweet, I recommend you this simple recipe, vegan and extremely satisfying. I hope you’ll enjoy!

Ingredients
  • 200g flour
  • 50g of almond meal
  • 1/2 tsp powdered vanilla
  • 1 pinch of salt
  • zest of 1 lemon
  • 50g sunflower oil
  • 80g coconut syrup
  • 500 ml of vegan custard (see my previous recipe)
  • Few tablespoons of granulated sugar

First of all the tartlets: mix the dry ingredients (flour, almond meal, vanilla, lemon zest, salt, NOT the sugar), then add the oil and incorporate well with your hands. Add the coconut syrup and enough water to have a firm dough. Knead rapidly and not for too long or it will become too elastic and less tarty.

Roll the dough, the thickness will depend on your taste, but I wouldn’t say more than 3-4 mm. Cover some tartlets molds with the dough and cut out the excess. Pour in the vanilla custard, dust with sugar and caramelise the sugar with a blowtorch just before serving. And here you go!

Now for the music you can chose whatever romantic song you like; as for me I think I am going to listen to Colourful, by Verve Pipe, from the movie Rockstar soundtrack, which is kinda of our song. Loving you all, and happy Valentine!
