Chocolate Salami

Just so we are clear… this is not an actual salami, so no meat involved here!!! Moreover, this is actually a vegan chocolate chorizo…. if you like chocolate and the illusion of being healthy, well, this is the cake for you!

My husband is the real specialist here. He loved this dessert so much that he couldn’t live without it during our vegetarian period so he got rid of eggs and butter and created this amazing combination. Here you have everything you would ask from a normal cake: dark chocolate, soft and silky texture, crunchiness from cookies…pure love! It can be a considered a classic Italian, therefore each family has his own personalised version. So if any other Italian is reading me out there, yes, I know, you do it differently, but this is vegan, and that’s my family we are talking about, so please, stop objecting. I hope you like it as much as we do!

Ingredients
  • 110g rice milk
  • 150g dark chocolate 70% (as decadent alternative, but it’s not vegan anymore, you can substitute 50g with white chocolate) 
  • 40g coconut oil (you can use macadamia oil but reduce the quantity)
  • 200g crushed cookies (I used the Digest)
  • 1 Tbs organic brown sugar
  • 1/2 tsp vanilla

Chop the chocolate in big chunks, and melt it with the rice milk on low heat, making sure not to burn the chocolate. If you use white chocolate as well, melt this one first and then add the dark chocolate. Once melted, take out from the flame and add the coconut oil until incorporated. The result should be a smooth and glossy mixture. Crush the cookies in a large bowl, and pour on top the mixture. Fold the ingredients all together so that all the cookies are well covered. Transfer the mixture on a large baking paper sheet, and roll the sheet so to form a cylinder. Leave it in the fridge for 20 minutes and then take out and adjust the cylindrical shape, so that it looks like a proper salami. Keep in the fridge for at least 1h before cutting into thick slices.
